Recipe of pasta

Here is a scrumptious recipe of pasta to tantalize your taste buds. Do give it a try and we’re open to all feedbacks:

Ingredients required:

  • Parmesan cheese
  • 250g pasta of your choice
  • Basil leaves
  • 2 tomatoes diced, slow roasted and peeled
  • Coarse salt and freshly ground black pepper to taste
  • ¼ cup pesto sauce

Ingredients for pesto sauce:

  • ¼ cup grated Parmesan cheese
  • 2tsp pine nuts
  • 3 cups fresh basil leaves
  • 2 cloves garlic, peeled
  • ¼ tsp. coarse salt
  • ½ cup extra virgin olive oil, divided

Method:

Cook pasta according to package instructions, but not hard. Before draining the pasta into a strainer, remove ¼ cup of pasta water and set aside. Wash basil, discard stems and dry properly. Take a blender and add pine nuts, garlic and salt and process for 15 seconds. Add basil leaves using pulse techniques while turning food processor on and off to shred basil. With the machine on pour in olive oil to create a coarse mash. Add Parmesan cheese, combine and set aside. After draining the pasta, put back in pot and then stir the basil pesto and the reserved pasta water a little at a time to create sauce. Add diced tomatoes and toss to coat thoroughly. Put in individual serving plates and garnish with sliced fresh basil leaves and shavings of Parmesan cheese and enjoy the delicious meal.
